It is a magical land of castles, medieval little towns connected by winding country roads, elegant restaurants and family run taverne. NOTE : For transportation we use ONLY LUXURY cars as Audi S6 C7 Avant or Audi A5 B8 Sportback or Mercedes Benz C220 SW AMG. We don't use any kind of bus or any kind of public transportation.

We'll have a day trip through the woods north of Rome, hunting truffles with the help of trained dogs, we will pass through areas rich in history of outstanding natural beauty. After the trip we will go to have lunch at my house, we will learn how to cook truffles dishes and we'll eat them for lunch with a very good wine. I will cook for you many different courses, all with fresh truffles! You will can taste many different combinations with fresh truffles! Then we stop to have the best coffee in Rome in a very popular bar, we drink a glass of wine from the bottle that waits for us in a picnic basket behind the car and then the famous Italian ice cream. We drive through the romantic alleys where many shops are located , in the air we can smell the inviting aroma coming out the restaurants that serve typical Roman dishes. At each place, we will get pictures taken by the staff or from me. Each stop will be 10-15 minutes and the guests are free to visit the locations alone if they wish so.. During this experience you'll be able to immerse yourself in my family long time farm history. It will be my pleasure welcoming you with a cup of coffee before visiting our cellar and garden where we'll pick some vegetables to use for the class. Then we'll jump to the kitchen and put our hands in the dough or, using an Italian expression, "mettere le mani in pasta". I'll explain and provide the ingredients needed, their proportions, the full process and methods included all the tricks and how to use all the necessary tolls. Then we'll prepare the sauce using ingredients from our farm, in particular our organic vegetables. After making the tagliatelle and ravioli , it will be time to make the typical Italian cake 'tiramisù' following the recipe of my great grandma. We are now ready to enjoy a delicious dish of handmade tagliatelle accompanied with a nice glass of our organic wine and finally the amazing tiramisù. This experience also includes a pice of our homemade limoncello. All the food will be prepared and served with our own organic extra virgin olive oil. During the 3-hour session, we will prepare 2 dishes FRESH PASTA and TIRAMISÙ entirely from scratch, guided by chef Paola. We'll begin by sourcing ingredients, emphasizing seasonality and freshness. You will acquire the skills to roll, knead, and shape a variety of pasta forms, such as: Tagliatelle, tortellini, pappardelle, ravioli, cappelletti and tortelli. From this selection, we will choose two formats to create two courses along with their respective sauces. Last but not least, you will also learn how to craft the most delicious dessert from Italy, the tiramisù. After preparing the dishes, you'll indulge in a 3-course meal, complemented and paired with wine. The recipes will be sent via email, allowing you to recreate the experience at home with your loved ones.

At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products.
